I am doing very well on a vegetarian diet consisting mostly of fruit and vegetables, whole grains (eg. steel cut oatmeal, brown rice, sprouted whole wheat bread). I've had small infrequent servings of chicken - so not 100% vegetarian. I eat some cheese, but very little. I drink water or diet rite soda which has no sodium and is sweatened with Splenda. I snack on peanuts and sunflower seeds. I tried low carb and low glycemic but this is working the best for me. I feel much better and am even thinking about cutting back on my glucophage, but I'm going to wait a couple more weeks before I try it. I've done a lot of reading and researching and I'm really puzzled by the fact that a high fiber, lower protein, low fat diet isn't discussed more and adopted more often by people with IR/PCOS. A plant based diet is full of vitamins and anti-oxidants. A high fiber diet regulates blood sugar very well - I've seen a number of articles on this. The american diet is excessively high in protein, lower protein gives our kidneys a rest, and low fat is good for our hearts. --Just wanted to share my experience and recommend giving a plant based diet a chance.
