Barbara, Personally, I eat fewer carbs than most people. If I ate what other people do, I'd have bad responses. My body will only tolerate a handful of carbs. I eat less than 10/meal, often less than 5. I know people will say that's too little, but I actually respond best to that. I eat a lot of snacks. If I don't snack every hour with protein, then I start getting irritable. At 90 minutes, if I haven't snacked, I'll get cranky (if I'm home with my husband--I seem to contain it at work pretty well). And, if I'm feeling hot, worn out, or irritable, I eat some cheese, and I get better in minutes. I do have a problem with getting hot and sweaty if I haven't kept my carbs low enough and/or snacked enough. I do eat small meals. At least smaller than I used to. When I upped my glucophage dose a couple months ago I found that by dinner time, I wasn't really hungry. I think that my snacks during the day, combined with breakfast and lunch, result in my body recognizing that I've taken in enough calories for the day, and I don't need anymore. So, my dinner is usually small, sometimes just a snack or two. So, I need to force myself to eat, so I don't have my symptoms. I have no real GI symptoms. Just fluctuations with my cycle, which I've always had (softer during PMS/period). I had changes after my gallbladder came out, but no new changes since I changed my diet. The shakes after OJ is probably because it's like a straight shot of sugar to your system. We tend to spike our insulin after something like that. I always wondered why coffee made me tired. It was because the caffeine stimulated my metabolism and knocked me out of whack, combined with the insulin response of the milk and sugar. Now, it's just flavored decaf's with cream and splenda.
