Hi,

I have been making some really delicious soups lately and very simple (I am a one pot woman and if it takes longer than 1/2 hour - including cooking time - I don't make it) and suitable for a light meal. THey all have the same principal: pick some complementary veges, add some lean meat(this really augments the flavour) or nuts, add some herbs / pepper to taste, cook until just soft enough to blend, put into blender and blend till smooth (or blend less if you like chunky) - enjoy! some recent combinations that I really enjoyed include:-

1 bunch of asparagus, one tin of tuna in brine (keep the brine and add to taste instead of adding extra salt), pepper, 1/2 packet dry cream of asparagus soup (can use the diet type). It is deceptively simple for the wonderful taste.

Chinese broccoli or green mustard (or both) with onion, garlic, touch of ginger, lean pork.

Leeks, lean frankfurter, eggplant.

Egg plant is a great filler in soups (use the white or long skinny versions which are not bitter like the big purple type). Oat meal (if you are using that)is also a good filler.,

Tonight will be parsely, chinese broccoli, and cottage cheese.

or.... lentils with tomato, onion....... can't decide

It is fun to experiment.....
