OK...here it goes....

The potatoes are actually called "fauxtatoes" and you make them like this: Take a whole cauliflower. Trim it of the greens of course. Steam it very, very well...until you can mash it. I steamed mine for about 20-30 minutes on high heat on the stove (large pan with just a 1-2" of water in it). Also add 1-2 cloves of garlic to the pan while it's steaming...that helps to get rid of the "cabbagey" taste. After it's also steamed and pretty soft....put it into a large bowl...cutting it into smaller chunks in the bowl is a good idea. Beat it in the bowl with an electric beater....till its as smooth as youcan get it. Add 1/2 block of softened cream cheese (I think it's 4oz). Just throw it in the micro for 30 or so seconds to soften it. Then add about 2-4 (your choice) tablespoons of butter. Whip it up good with the electric beater. VOILA!! There's your mashed potatoes!!! Honestly...I never thought I'd like them as much as I do! I really couldn't even taste that it wasn't mashed potatoes....and my boyfriend thought they were! Instead of using the corn, fry up your ground beef with a small can of mushrooms and some chopped up garlic. Put the fauxtatoes at the bottom of your baking dish, followed by the beef & mushroom mixture....and then top with your choice of cheeses. I used shredded Monterey Jack & Cheddar. Bake at 350 for about 30 minutes. YUMMY!!! Also, another variation I tried (if you really like corn) take the canned small corn cobs (quite low in carbs)....chop them up and use them between the fauxtatoes and meat. I think it was the fauxtatoes I was so impressed with! I got the recipe of a lo-carb site....I'll have to find it and then post...tons and tons of recipes!!!
