hi lauraAnn, i agree 100%, it is expensive to eat healthy. i was also taught to allways have a meat, veggie & starch, and lots of starch to cut costs & fill up. I thought i was doing ok, because i use brown pasta, rice, breads, etc. i can only come up with a few good meals that are low or no carb: carbofree chilli (yum) and the cabbage & sausage stir fry thing that someone else mentioned. i have some great salad recipes too, (3 of them) i am having a hard time with this no carb!!! anyway if you would like my scant few recipes i will gladly share, just let me know (although it may be after the holidays by the time i get time to type them out)
