Hi, I have also been 'researching' the carb issue. From what I have read and how I feel, it is not just the refined carbs we need to avoid, it is also the high glycaemic index complex carbs we need to avoid. The issue is to eat foods that will not stimulate a big insulin response. So most veges are ok (except starchy ones like carrot, potato, etc), fruits are ok (but not too much, and preferably low glycaemic index foods). Not just the foods, but also how much and the combinations. The Zone which I am trying to follow (a bit creatively at times) requires that you eat very small meals frequently (not more than 200 - 300 calories/meal) - up to 5 or 6 times a day, and that every meal must include a small amount of protein (low fat ideally - their idea of small is about as thick and as big as the centre of the palm of your hand - which is pretty small) and ideally a small (and they do mean small) amount of 'good fats', as well as high fibre and low glycemic index carbs. YOu actually have to eat quite a big volume of food when you follow this diet, but it is 'low' carb. It works pretty well and I am never really hungry - and I am losing weight though very slowly (about .5 lb per week). However, everyone is different and some women find it more difficult to deal with some carbs than others. You need to experiment with what works and makes you feel good. White bread is my absolute downfall. If I have even one slice I'll eat the loaf and then go looking for more. Whole grain, high fibre bread I am never tempted to eat more than one or two slices.
