Hi Katie,

One of my favorite low carb lunches is the following:- chopped cucumber, cottage cheese, chopped nuts, dried fruit (sultana, apricot, etc). I add lean ham sometimes (but it is not necessary if you are vegetarian) It is very delicious and quite filling and can be prepared in just a couple of minutes.

Other ideas:- plain yogurt with some fruit. - cheese and nuts and some dried or fresh fruit. - dried fruit, cheese and nuts and high cocoa chocolate

My brand of low carbing doesn't cut out fruit (but limit to 3 small serve/day - not eating bananas or pineapple or watermelon), all veges except potato and carrot, no bread, pasta, rice, product made with flour or obvious refined sugar, refine sugar of any type, low fat protein sources, olive oil and linseed oil encouraged ........ I don't always end up sticking with it - crackers or plain biscuits tend to tempt me (but a small amount doesn't seem to effect my energy levels)!..... but if I succeed for 80% or more of the time I am happy. The main problem comes if I don't eat enough protein - then I tend to want to go crazy on carbs....
