I make up a huge salad with lots of lettuce/cucumbers/raw carrots/radishes/ tomatoes/olives and for the protein/carb part I use chickpeas/black eye beans and occassionally some tuna/salmon flakes (I am a pescarian- so I eat some fish)

I also take in soup which I make in huge batches with any veggies eg. cabbage/onions/green beans/leeks except potatoes/sweetcorn/parsnips/pumpkin/carrots which are all high glycemic foods. raw carrot is OK but cooked apparently is quite high. I also put beans in the soup as this helps to keep you feeling full for longer and stops me snacking.

I also make my own bread with wholemeal flour,oats, water and yeast and a bit of salt. Processed breads are higher on the glycemic index.
