thanks renee and jen, i appreciate the tips. i'm still learning a lot about all this, as i've only been recently diagnosed lactose-intolerant (aug. 2001) and recently diagnosed with PCOS too (june 2001). unfortunately (as far as dealing with these two conditions), i have also recently moved to africa.....and i'll be here for a year. so mozzarella and cheddar are hard to find (though i have heard cheddar is available, but at some pretty steep prices!). and the products with lactase are not available at all, nor are the drops/pills. and those great soy products you mention, jen, used to be central to my diet at home, but here, i can'get any of them. so i have to make do without. maybe the cheddar will fill the snack urge....! how are beans? they are high in dietary fibre, so effective carbs are pretty low right? that's the other thing. i have been counting grams of effective carbs (subtracting fibre) - i got that from the "pcos and diet" article by marth mckittrick. is this correct to be doing, or am i actually underestimating how many carbs i intake? thanks again to both. any more tips would be very much appreciated. s.
