What about eggs? Can you eat them? If you're worried about cholesterol, you can buy pure eggwhites at most grocery stores now, which have no fat or cholesterol. I have heard of soy-based products that are low carb, but I haven't seen them around much. Morningstar Farms makes some fake meat sausage that's pretty low carb. Also in terms of grains, the whole grains (whole wheat, buckwheat, rolled oats, brown rice) are absorbed much more slowly than refined grains, so you can have a few more of those if you want. I seem to remember the Carbohydrate Addicts' Life Plan diet had veggie alternatives for several of its menus. You might want to check it out of the library to see if it makes sense for you.
