Just a note from someone else who was once a vegetarian (for something like 12 years): I started eating meat for other reasons (like my husband was a meat eater, and I found it difficult to eat a separate meal all the time), and I did not lose a great deal of weight after starting to eat meat. So I think everyone's body reacts differently. Sure, I wasn't low carbing at the time, but still, I just wanted to put in my two cents' worth about it. Eating meat is easier in this world, especially if you want to go low carb, but there are options. The Soy Zone is one book, another is The Schwarzbein Principal Vegetarian cookbook, and the Carbohydrate Addicts Life Plan book has several vegetarian menus and recipes in it.
