Kim, This is my first time posting too. :) I'm not a vegetarian, but I've cut way down on the amount of meat I eat. My doctor recommended "The Soy Zone" by Barry Sears. Not all of the recipes are vegetarian or vegan, but many are. There's a recipe for "meatballs" in tomato sauce that's really good. The "meatballs" are made with GimmeLean, a soy meat substitute with the same texture as ground meat. The chili is good too, made with soy "burger crumbles" that you can find in the frozen section at the supermarket. There are many other books available on vegetarian eating too, but I liked this one because it explained how to determine exactly how much carb, protein and fat to each at each meal. The "block system" he uses I thought was confusing and I don't use it; I just used the charts in the book to help me find out how many grams of carb/protein/fat I should be eating. And once you understand how much carb/protein/fat to include in your diet and where you can get it from, you can make up your own recipes. There's a couple of sites online where you can input ingredients for recipes and it calculates the nutritional content per serving. You can find this book at the library or any of the chain book stores. Good luck! Maybe next time you can laugh at the specialist. :)
