Hi Cara,
Carbs do seem to be the problem. I went to a dietician and she suggested the same, use a similar diet a dietbetic would.
To decide which carbs to use, use the glycemic food index.
The glycemic index is a measure of the rate at which food is broken down and absorbed into the blood stream. The higher the glycemic index, the more rapid this process is. Foods should be chosen with low to moderate glycemic indices, so as to minimize the insulin response, and in so doing, increase the amount of fat used as a fuel source.
As an example, eat rye bread instead of normal bread, etc. And pasta rather than rice (I don't know if you are able to get basmati rice in USA? Indian rice?)
Futher to this, I am limited to two fruits a day, should eat 5 cups of vegetables, minimal protein and am allowed 7 servings of carbs (one slice of bread, medium potato, 1/2 cup pasta)
