Katie,

Have you tried any soy lunch meats? I know they have turkey, pepperoni, veggie dogs, etc. Those things might be helpful to you because they're quick, though I don't know what their carb content is. Veggie burgers seem a bit higher than I think those other things would be. YOu'll have to check a few labels. Don't they also sell some cooked tofu products, like baked tofu and smoked tofu? I'm trying to remember some of the things I ate for lunches as a vegetarian (I've gone back to chicken and fish, too) or that veg. friends did. Maybe you could make a vegetarian cassarole once a week and reheat some throughout the week at work for lunch? I saw an interesting recipe for a low carb tofu lasagna somewhere on line this week where you sliced the tofu really thin and used it instead of noodles. It sounded pretty good. I'll try and find it for you.
