I tried the Pecan Pancakes recipe at http://www.camacdonald.com/lc/LowCarbohydrateCooking-Recipes.htm this morning and even hubby ate them. I'll admit that I screwed up the baking powder and soda, ending up with even amounts of each and dissolving the wrong one in water. They came out kind of light and airy that way, but didn't taste overly egg-y like most low carb recipes. They stuck a little bit, but I may have had the pan too hot. I'll definitely try them again with the right proportions of each and maybe at a lower temperature. I also kind of liked this recipe: Cinnamon Cheese Danish Atkins Rolls at http://www.carb-lite.au.com in the Bakery Section. Though it needs some tweaking. It was the original one that I over-Splenda-ed. It's way too chemically with 1/4 C in both the pastry and the filling. I'm going to try making it again with maybe 4 packets and the pastry and 1 packet in the filling. I'll let everyone know how it turns out. I also found http://www.pcos.net/lc-recipes.html but I haven't tried any recipes from there yet. I'd welcome any less egg-y breakfast recipes that people have tried and enjoyed. I'm hesitant to just try them at random from websites, because so much ends up getting thrown out if it tastes too much like eggs, YUCK! (IMO).
