A-ha! I think I've found the answer to my own question, about the Splenda anyway, in case anyone else was wondering. I found more recipes calling for Splenda that actually said "equivalent to 1/4 C of sugar" so since the Splenda packets are actually equivalent to 2 teaspoons of sugar, I guess I should have used half as much as the recipe called for.

And to think I opened all those little packets for nothing *sigh*
