Jennifer, I have been "put" on 4 of the different low-carb diets. The one that seems to be the easiest to follow is The Carbohydrate Addict's Diet by Rachael and Richard Heller. They all, (the diet books) explain the insulin connection with carbohydrates. I hope this helps.
