How many carbs is low carb?

I have PCOS and am IR. I'll be starting glucophage for my outrageous insulin levels (up to 305 during a GTT!!!!!). I currently eat tons of carbs (rice, potatoes, pasta, bread, etc...). I could cut down my sugar intake fairly well, but how many total carbs should I be eating? I really have no idea what constitutes a "low carb" diet.

Any help would be appreciated. Thanks!
