I still eat pasta and rice; my doctors have me counting carbs right now to help with weight loss i'm currently allowed 150 carbs which is a lot depending on how you choose to eat in a day...i eat pasta and rice white, brown, and wild on a regular basis just not as much as I once did..don't give up hope....I started with 1000 a day and had some problems too call the doctors they lowered my dose to 500 a day for a few days then I increased it now however I am up to 1500 a day and hope I won't have to go to the next level 2000. It does get better. good luck...

>>kmarie, I admire your committment to a vegan diet (I've never been able to do that). Just some suggestions: try to find meat substitute that has fewer than 2 g. of carbohydrates per serving. I know it's difficult, but it can be done.

Also, try the Atkins or Metabolift drink mixes. They are high in protein (I don't know if it's vegan protein or not). Of course, you should supplement these with carbs from vegetables. Are there any vegetables that are low glycemic but also high in protein?
