Becky -Everything I've learned About Low Carbing(VERY long)

Hi Becky, I read about Atkin's and Sugarbuster's, but didn't follow either one! I think everyone needs to sort out there own path on this low-carb thing. I eliminated sugar and flour right off the start. THAT was a thrill, let me tell you. I lived for potatoes, rice, noodles, bread and of course all the sweets I could find. It helped me to just go cold turkey one day and stick to it faithfully for a couple weeks. I don't eat any sugar and limit carbs to 100 a day or less for now. I eat any meat, poultry, fish,eggs and dairy - cheese, cream cheese, cottage cheese etc. Also any vegetables except corn and peas, ( no potatoes, tho of course). They are all high in carbs. I also watch fruit (bananas are the worst!). Always eat some form of protein anytime you eat a carb - like a cheese stick when you eat an apple. You also have to watch artificial sweetners, because (horrible as this is!!), some people with insulin resistance with have insulin released into their system because their body detects a sweet taste in the mouth, even if it's artificial. Soooo, watch the diet sodas, sugar free stuff, etc. I'm hitting this diet trail really hard because I'm having my fasting insulin level repeated in 2 weeks ( will be 3 months since the last one) and the Endo would love to see a big drop due to diet before I have to go on Glucophage (which will be mid-January probably) Well, I feel like I have rambled long enough. Please e-mail me if you want to ask me anything else. I DO feel so much better. I sleep great and wake up feeling really rested and have lots more energy during the day. I also feel better emotionally - bad mood swings were gone by the 3rd week!! I also had really bad headaches A LOT and those are completely gone, too. I know this lifestyle change is not for everyone, BUT it is worth checking out if you are having problems. Are you Insulin resistant or have been you been tested? Hope this has helped.
