2500 mg of met per day, need some diet advice

I am now on 2500 mg of met a day and am having problems adjusting to this diet. I am supposed to eat 5 times a day to help combat the insulin problems. My numbers were extremely high when I was first diagnosed. I am trying to find out what types of snacks I should have. I am workin on the High protein/low carb for my 3 main meals a day and am doing OK for lunch and dinner. My problem areas are Breakfast and my snacks. Any suggestions??
