Gayle, I don't think onions have been tested yet (at least not in any index I have seen), but they are known to have many of the compounds as garlic, which are healthy for the insulin-challenged. It is a vegetable that is recommended by the authors of "Syndrome X" as one that people with insulin difficulties should eat on a regular basis (celery and garlic are the two other veggies). It is supposed to lower cholesterol, triglycerides, blood pressure and glucose levels. In other words, baked onions should be ok to use.
