a question about carb intake or no carb intake

I know that a lot of diets veer one way or another with carb intake. and for us, we have much more of a carb problem than most people, including ravenous cravings for some....my question is this: has anyone had any success with eating few carbs, but still having some in their diet? i've been doing some readin' and it seems that some carbs are much faster to go into your system than others, therefore making your pancreas work harder to produce insulin to cope? so, if we are unable to stop eating carbs, wouldn't it make sense to at least try to eat the ones that are slower to be digested? our bodies need carbs, right? i am still trying to figure all this out, myself. it gets so frustrating and confusing! i am not tons overweight now, although i did gain about 25 lbs in a very short time period, i was able to lose some after being on met and spiro. however, i've noticed that whenever i DO eat carbs, sweets mostly, or a lot of bread, that i, for lack of a better word, bloat up like i'm pregnant. and if i continue to do this over several days it seems to take forever to go away. also, (sorry girls) i get massive gas! but i am able, if i eat a little carbs with say, salad, for dinner that it doesnt' affect me nearly as much. i've kinda been rambling but if anyone has any good imput i'd appreciate it :) thanks blabs
