Hiya Becca I have had trouble blending splenda with cocoa - it congeals (ick!), but is great for baking. If you are looking for ice cream, try looking at http://www.lowcarbluxury.com. Look under deserts for Keto ice cream. It is not as good as real ice cream, but does make a reasonable substitute, at least as far a cravings go. If you want cocoa, I'd suggest Swiss Miss sugar free cocoa. It is yummy, and they use splenda. If you ignore the cravings, they do eventually slip away. The worst is the first couple of weeks. It is difficult to get over our addictions, and that is exactly what is happening for the first few weeks. Sometimes this process can take a little longer if you have developed an allergy to something, like wheat, for example. When I quit wheat products, for example, I felt like I would kill for a piece of my husband's sandwich..lol...I don't tend to miss it at all now, and find the flavor lacking when I do try it these days. In my experience, it took about a month for the diet to fully take effect. I did lose quite a bit of weight (for me anyway) when I started, but I am not as stringent as I used to be, so am maintaining weight now. Everyone is different, but take it as a clue that the blood sugar levels/insulin levels are balancing out a little when you begin to lose the constant cravings. The body is readjusting to having less sugar crashes, and therefore, less insulin release. There is an excellent book that explains a lot about insulin resistance titled "Syndrome X" by Jack Challem. It gets into nutritional values of things and various supplements one can take for various symptoms that come with insulin resistance. See if your library has it, for it really is a good read. Lekili
