Hi Maggie-
I am also going through the process of trying to change my diet and
experiencing similar frustrations. It seems everything is bad on some
level. There are two books I that I think might help you. The first
one is "Endometriosis A Key key to healing through nutrition" by Mills
and Vernon. The book is well writing and very hopeful, however, it is
also quite complex. The second is "the smart baking cookbook" by Jane
Kinderlehrer. She does use allot of wheat flour but, you can substitute
buckwheat flour. Not all of the recipes will work for you but, it will
give you some good ideas.
Also I think I am going to try and find a good dietitian to help me
figure all this out.
