Dear Leah,
I have only just been diagnosed with endo after 17 yrs of pain and suffering.
I can understand your sense of frustration, and somehow I am not surprised at the conflicting information given to you by the hospital you had your hysterectomy performed at.
To reply to your symptoms, I have also experienced pain at intercourse, unexplained weight gain, tiredness that seems out of the ordinary.
In my case however, I recently had a laperoscopy to remove endo tissue and I started getting pain just before my period began in my right kidney ( or so I thought )
I went to my local hospital where I was admited, they thought it might by my gallbladder! After X-rays and ultra sound scans showed nothing abnormal the theory in that I may have extra peritoneal endometriosis.
In other words, endo located outside the pelvis. In this case they beleive it may be on my lung.
It sounds to me that if your endo was as wide spread as you say you may have some still inside you on your bowel, arms, legs, of even on your lung too.
It is rare, but very possible.

I hope this points you in the right diretion! Take care, and good luck,

Maria Adams Essex, England.
