If I were you, I would do two things. Get a checkup with OBGYN and make an appointment with a Gastro doctor. I had everything you mentioned above. I had a hysterectomy with endo removed and 10 months later back in for removal of ovaries and endo again. Unlike you, my hysterectomy did not fix my iron anemia. I ended having all kinds of tests run by a Gastro doc and he diagnosed me with Celiac Disease. It was causing the iron anemia. You might have Irritable Bowel Syndrome, but signs of IBS, iron anemia, etc can be effects of Celiac Disease. I would have it check on especially since you mentioned eating gluten-free foods has helped. In case you don't know, Celiac Disease is a gluten intolerance. The treatment is a strict gluten-free diet. Before I was diagnosed with Celiac Disease, I felt terrible and had a bloated, full feeling all the time. Best of luck to you!
