Hi everyone! I hope you all are doing great today! I'm doing pretty good. I finally after napping all day yesterday and sleeping for about 14 hours str8, dont feel exhausted!! lol. I just thought that I would share a recipe with yall that my friend sent to me. Hope yall enjoy! Have a happy and pain-free day =) Low Fat Fudge 2 1/2 c. sugar 1/4 c. cocoa 1 c. milk 2 tablespoons corn syrup 1 tablespoon mint extract (can substitute 1 tablespoon raspberry jam) Put sugar, cocoa, milk and corn syrup into a fairly large sauce pan and mix. As SOON as you turn the heat on you must NOT stir the fudge again until it's cooled. Turn on to medium heat and let the fudge boil slowly. To check when the fudge is done spoon out a bit and drop into a cup of lukewarm water, if it forms a soft ball in the water it's done and is ready to be taken off the heat (you can also use a candy thermometer to check this). When it forms a soft ball put the saucepan in a sink of cold water and let cool until the bottom of the pan feels lukewarm. Add the mint extract and whip the fudge until it loses its sheen. Pour the fudge quickly into a waxed paper or cling wrap lined container. Store covered.
